Spice Beyond Sauce – The Global Story of Heat
Following the success of our Fermented Hot Sauce Workshop, we invite you to go beyond the bottle and explore the diverse, fiery world of hot spices from around the globe. This workshop will introduce you to unique chili and spice varieties, their culinary traditions, their role in history, medicine, and culture and how to preserve them for a long time.
Learn about the nuances of spice through tasting and scientific background: capsaicin (hot peppers), hydroxy-alpha sanshool (sichuan), allyl isothiocyanate (wasabi) and lets make together products like Shito (from Ghana), Zhug (from Yemen), Achar (from India) and many more
🔥 What to Expect
- The Spice Route – Explore how the spice trade shaped global cuisine and introduced heat to unexpected places.
- Peppers & Their Heat – From smoky chipotle to numbing Sichuan pepper, uncover the science behind different spice sensations.
- Cooking with Fire – Hands-on session where we create spicy pickle, ferment, oils, and/or traditional chili-based condiments. We’ll make 2 out of a variety of possibilities. You will go home with 2 condiments of 150ml each
- Tasting Challenge – We go from flavorful low heated peppers to extreme heat while introducing you to heat variations, numbing sensations or taste explosions.
