Our Exploration Brunch, what is it?
A monthly journey through our ferment lab in the form of a discovery buffet made out of all our and our partners experimentations.

Our goal at this brunch is to showcase the future of food: locally sourced, zero waste, low carbon impact & easily reproducible. It’s a feast for all the senses and designed to be durable and good for the planet.

 

This Month: Farm To Table – Greetings from Spring!

Celebrate the season’s first treasures with a “farm-to-table” brunch inspired by the very beginnings of spring. This edition pays homage to the fresh, tender vegetables that have soaked in the first rays of sunshine and are now ready to shine on your plate.

Expect dishes bursting with the vibrant flavors of young greens, delicate shoots, and crisp veggies straight from the fields. Each bite is a celebration of renewal, showcasing the beauty of produce at its peak and the connection between soil, sun, and table.

We’ll take you on a culinary journey that highlights the artistry of working with fresh, seasonal ingredients—simple, yet extraordinary. And, of course, we’ll share stories about the farmers, fields, and first harvests that make this menu possible.

* A Central warm tray dish
* A Stew / slow cooked dish from around the world
* Locally sourced grain or rice salad
* Two or three dips inspired by our Lab taste makers
* A Cold or Hot soup with the available vegetables of CSA Courjette
* Two Seasonal lacto ferments or preserved vegetables
* A Sourdough Bread with a story from Les Coopains de la Boulangerie
* A couple of Zero waste desserts (with the recipe as a gift!)
* Ancestral Jam or Chutney
