Welcome to CourJette’s Summer Field Workshops 2025!
We’re excited to invite you back to the peaceful green haven on the outskirts of Brussels for a brand-new season of hands-on fermentation and preservation workshops. For over four years, CourJette has been a place of connection, cultivation, and creativity—and this summer, we’re diving even deeper into the world of slow, seasonal, and sustainable food.
5 May – Introduction to Preservation and Fermentation

Start the season with an engaging introduction to the principles and practices of fermentation and food preservation. Expect a mix of tasting, storytelling, and practical tips to kickstart your journey into preserving the harvest.

2 June – Lacto-fermentation of Seasonal Vegetables

Bring your knife, cutting board, and a 500ml jar—we’ll provide the vegetables! Discover the transformative power of salt, time, and microbes as we ferment together with what the fields offer us.

7 July – Fermented Drinks: Ginger Bug, Kefir & Kombucha

Fizz, funk, and friendly cultures! Learn how to make your own fermented beverages—from bubbling ginger bugs to kefir and kombucha—using seasonal ingredients and simple techniques. Tasting included.

1 September – Giardiniera: Italian-Inspired Fermentation

Bright, tangy, and perfect for preserving late summer veggies! We’ll make a colorful batch of Italian-style giardiniera. Bring a knife, cutting board, and a 500ml jar to fill with flavor.

20 September – Hot Sauce Workshop (Before the Oogstfeest)

Get spicy just in time for the harvest celebration! Bring your tools and let’s turn peppers, herbs, and seasonal produce into bold, fermented hot sauces.

6 October – Green Tomato Preservation

Close out the growing season by transforming unripened tomatoes and other end-of-season harvests into delicious preserved goods. As always, bring your tools and a jar to take home your creation.
