What started as a monthly Exploration Brunch has grown into something more stable, more collective, and more rooted in everyday practice. From now on, brunch becomes a weekly Urban Fermentory table.

Every Sunday, Fermenthings opens the doors of the lab and the kitchen to set a table built around fermentation, seasonality and collaboration. This is not a fixed menu and not a performance. It is a shared meal shaped by what is fermenting, what is ready, and what our partners are working on that week.

The Urban Fermentory Brunch brings together the projects that share our space and our values:
Atelier Kuukuu, NuuMiso, Malyce, FelFel, Shadow Reaper, Les Coopains de la Boulangerie, SCOB, alongside Fermenthings’ own ferments and preparations.

Each Sunday is slightly different, but the intention stays the same:
warm food, living cultures, thoughtful sourcing, and time at the table.


What to expect

The brunch is centred on fermentation and Japanese-inspired flavours, interpreted through local ingredients and shared know-how. Dishes are made to be eaten, not displayed, and to make sense in the rhythm of a Sunday.

You can expect a generous table that may include:

  • One or more warm dishes
  • Seasonal vegetables, preserved or freshly cooked
  • Fermented elements in different forms: miso, pickles, sauces, broths
  • Bread from Les Coopains de la Boulangerie
  • Drinks from across the Urban Fermentory, alcoholic and non-alcoholic
  • Something sweet, often built around preserved fruit

The exact composition evolves week by week, following availability, fermentation timelines and collaboration.


Why we do it this way

This brunch is an extension of how we work every day.
It is local, low-waste and low-intervention, without being restrictive.
It is reproducible, grounded and generous.

Fermentation allows us to cook with time rather than urgency, to use what we have rather than what looks perfect, and to build flavour without excess. The brunch reflects that philosophy on the plate.

💶 29 euro p.p (buffet format + 1 warm drink and cold non-alcoholic drinks included)

Booking in advance helps us plan, avoid waste and keep this table sustainable. Walk-ins may be possible depending on availability, but reservations are strongly encouraged.


A note on rhythm

This weekly brunch replaces the former monthly Exploration Brunch.
It is part of the wider Urban Fermentory project, a shared space dedicated to the practice, culture and craft of fermentation.

Come for a meal, stay for the conversation, return for the ritual.
