Ingredients:
red cabbage, red beets, red onions, daikon or black radish, black garlic, ginger, chipotle (dried smoked jalapeno) and salt
Our take on the color of kimchi. We experimented with ingredients that create a mostly dark color. The black garlic gives this kimchi a meaty and full note. The chipotle makes it spicy and adds a little smoke. Fermented for around 7 days it produces a nice acidity but also full and complex flavors.
