chinese cabbage or white cabbage (depending on the season), carrots, leak, daikon or black radish, garlic, ginger, gochugaru (korean pepper flakes) and salt

The soaked and salted cabbage is mixed with the rest of the ingredients and fermented for around 7 days. It has a nicely acidic and a little spicy note. The garlic and the ginger lift it up. 


All our ferments are made 100% with love by hand, not treated and full of guts goodness.
