From 2020 onward we are bringing our Brunch formula to a weekly basis. To facilitate reservation and make it a pleasant experience for all, please do one of the following:

Buy ticket in advance on our website
Price: 20 euro
Kids less then 5 year old: free
Between 5 & 10: 5 euro
Between 10 & 14: 10 euro
Brunch start at 11h30 till 13h30. Late arrival can mean that some products are gone, we try to be zero waste as possible & not promote over-consumption.
What can you expect?
Our first iterations for the Brunch were in May 2019, using what we had around: Mad Lab, Lily’s Granola, Marché Bio & La Source as main provider. We combined that with own fermented products, or from a couple of our Brussels based producers: La Fruitière (cheese), Spek&Boonen (Meat) & Bis Gourmand (Lactofermentation)
When opening our space in October we made some adjustments to the concept and started with the Brunch Buffet. We prepare as fresh as can be, buying every week our fruits, vegetables at the bio market, passing by our producers & discussion about new and interesting ingredients. We want our Brunch to be as surprising every week, changing slightly the ingredients or preparation method. Fermentation is at the core of the concept, but we let our guts & taste-buds decide where it is going next week.
We propose the following
A popcorn (ex. Hot Sauce caramel, Miso, Smoked maple syrup)
A Granola (based on the season and fresh from Lily’s Granola
A cake/cookie/pie (ex. Miso chocolate brownies, Pecan Nut Pie, Pear Crumble)
Two lacto fermented vegetables salades with the seasonal green and vinaigrette of the moment (based on our stock of home made vinegars)
A grain based salad (Ex. Quinoa, Couscous, …)
A cheese selected at La Fruitière
A paté or Rilette made by Spek & Boonen or Paté To The People
A vegan spread (Ex. Vegetable paté, pumpkin jam, humus)
A seasonal soup with a twist
An egg based recipe (Ex. Japanese rolled omelettes, Kimchi pancakes, Mimolette omelette)
A test kitchen recipe (The surprise of the moment)
We add little experiments through every brunch so we can share what the latest inventions are from the test kitchen!
